Zmora Winery, located above the dam and reservoir of Moshav Beit Zait, was established in 2003.
The winery, with a view on the hills of Upper Motza to the west, and Ein Karem to the south,
produces 40,000 bottles annually, and is the realization of the dream of its winemaker, Baruch Yosef.
The Winery does not own any vineyards. Instead, we believe in forging long-term relationships with independent grape growers of the best quality. Zmora buys its grapes from the Golan Heights, The Upper Galilee, the Shomron, and the Ramat Ilan area. Grapes are hand-picked and shipped speedily in small containers that protect the harvest until they arrive at the winery. The decision when to harvest the grapes is made together with the vineyard owners in order to attain the best possible results. Fermentation is carried out in modern stainless steel tanks that are temperature controlled. This new equipment provides our winemaker with the tools necessary for the production of continuously excellent wine. Climate control is a basic requirement for other winery activities, such as bottling. The air-conditioning system prevents the negative impact of the hot, humid days that are usual in our region. After fermentation, the wine is moved from the tanks to mature in oak barrels, most of French wood, as well as American and Eastern European wood. Bottling, corking and labeling is carried out by automatic machines to ensure wine quality. All the wines produced by the winery since 2004 are Kosher. Neither kashruth nor increased size is accepted as a reason to decline in quality. To that end, the partnership has given special care to building long-lasting relationships with vine growers from the best locations in Israel. The two medals garnered in Eshkol Hazahav 2006, as well as the two medals garnered in the previous contest in 2005, attest to the fact that Zmora Winery makes consistently excellent wines, with some deemed the best value.
